I have been taking a break from “couponing” this past month due to traveling and visiting with family.  But I started getting the “itch” this past weekend so I headed out to Harps today to catch their last day of Double Coupon Week.  They have a new rule that only allows you to use 20 coupons per day and you can only buy 2 of the same item.  Due to this their crowds have really gone down, which is great for me because there is more of a selection and I found some of their items that are ALWAYS out of stock had a few left! P.S For those of you wondering what on earth I use all these sauces and dressings and condiments on, we buy most of our staples at Aldi’s unless I find good deals elsewhere.  Items at Aldi’s such as tortillas, rice, beans, produce, baking goods,and pasta are good quality and great prices.  I usually stock up on chicken and ground turkey at Reasor’s every 6 to 12 weeks.

Reasor’s: Saved 36%

I do not often shop at Reasor’s (maybe once a month) but saw a few items in their ad this week that I wanted to check out.  Unfortunately, they had misprinted their butter price and had signs posted correcting their error (it was listing Hiland Butter for $2 a lb, but the actual price was $2.50 which is still good).  I was excited to find new products that I had free coupons for as well as a great deal on milk and chicken!!

Using coupons and clearance prices, my total was $20.22.  I would have paid $31.22 without coupons or clearance prices.  That is a savings of 36%! ( I did not know the original price of the milk, cheese, or butter so did not include those sale prices in my percentage).

Chocolate Chip Cookie Dough Cupcakes!!!

I came across this recipe on a website called Tidy Mom. She has the directions and ingredients and also finished pictures, but none of the actual “process.”  Since I’m a visual person, I like to see exactly HOW someone makes something. So I took pictures as I tried out this recipe for the first time.  It was time consuming (the whole process took a total of two hours, maybe another half hour for dish washing!) but let me tell you, the results are far worth it!!

Cupcake Ingredients:-3 sticks unsalted butter, at room temperature
-1½ cups light brown sugar, packed
-4 large eggs
-2 2/3 cups all-purpose flour
-1 tsp. baking powder
-1 tsp. baking soda
-¼ tsp. salt
-1 cup milk
-2 tsp. vanilla extract
-1 cup chocolate chips (semisweet or bittersweet)

Directions

1. Preheat oven to 350 degrees.  Using your mixer, combine the butter and brown sugar.  Mix for 3 minutes on medium speed, until light and fluffy.2.  Add the eggs one at a time, making sure to scrape the side of the bowl so that all is blended well.3.  In a medium bowl, mix the flour, baking soda, baking powder, and salt.4.  Add the dry ingredients and milk to the mixture in the mixing bowl, adding a little bit of flour and a little bit of milk at a time until all is blended.  Blend in the vanilla, then the chocolate chips on low speed until just mixed.

5. Set out 24 cupcake liners in cupcake trays.  Fill the cupcake liners evenly with batter, about 3/4 full.  6. Bake 18 to 20 minutes, or until toothpick inserted into cupcake comes out clean.  Cool in the pan for 10 minutes, then transfer the cupcakes to a wire rack to cool completely.  I recommend putting it far away from the oven (such as the kitchen table) to cool faster.

Cupcake Filling Ingredients:-4 tbsp. unsalted butter, at room temperature
-6 tbsp. light brown sugar, packed
-1 cup plus 2 tbsp. all-purpose flour
-7 oz. sweetened condensed milk (NOT the whole can!)
-½ tsp. vanilla extract
-¼ cup mini semisweet chocolate chips

Directions:

1. As the cupcakes are baking, make this filling because you will need to refrigerate it for an hour! (I didn’t read that part and it really slowed down my process!).  Beat butter and brown sugar in mixer until fluffly and creamy, like before!

2.  Add the flour, sweetened condensed milk, and vanilla and beat until smooth.

3. Stir in the chocolate chips.

4. Cover with plastic wrap and refrigerate for 30 minutes to an hour until firm. (Mine took about 40 minutes)

5.  After cupcakes have cooled, cut a cone shaped portion out of the center of the cupcake.  I had no idea how to do this or what to even use, so I ended up using the end of a handle on a teaspoon.  It worked wonderfully. I’m sure there is some more refined way of doing this, but I have no clue. Save the cupcake insides to eat later hehe!!6.  Fill each hole with a chunk of the cookie dough filling.  I used the end of the spoon to stuff as much as I could down in each cupcake.  YUM!. These are what they looked like when finished with the filling:

Cupcake Frosting Ingredients:

-3 sticks unsalted butter, at room temperature

-¾ cup light brown sugar, packed

-3½ cups confectioners’ sugar

-1 cup all-purpose flour

-¾ tsp. salt

-3 tbsp. milk

- 2½ tsp. vanilla extract

Cupcake Frosting Directions

1. Cream together butter and brown sugar in mixer until light and fluffy (um..you’ve done this twice already, hopefully you know what you’re doing by now!)

2.  Mix in the powdered sugar until smooth.

3.  Beat in the flour and salt

4.  Mix in the milk and vanilla until smooth.

5.  Frost cupcakes.  I decided to be fancy and use a pastry bag and try different tips. You could easily just frost these with a spoon or spatula and call it a day too. Sprinkle on mini chocolate chips for the finishing touches.

6.  Eat this delicious, melt-in-your mouth cupcake.  Interestingly, my husband and I think these taste the best right out of the fridge so we keep ours in there.WHEW! This post took forever.  I think I need to go eat a cupcake now…;-)
